Polly Filice



Polly Filice grew up in Washington and skied bummed at Crystal Mountian. She moved to Jackson, looking for a new place to ski and call home. She started working at Pearl Street in 2001 and fell in love with the job and community.

In 2008 she jumped on the opportunity to become an owner. Her favorite aspect of Pearl Street is the community and being a little bit of everyone’s life. Polly loves being a hands-on owner and getting to know her staff.

When she’s not at work, she can be found backcountry snowboarding, mountain biking, hiking, and hanging with her husband, kiddo, and dog. She still loves a perfect, fresh-baked everything bagel and a cappuccino just like it was her first. Feel free to stop by and say “Hi”!







Heather Gould started in 2003 as Barista in the Wilson location and became Co-Owner in 2008. When she is not behind the bagel counter or in the office keeping the books, you can find her on the quieter side of the Tetons, staying active with her husband, three young kids, and a barnyard full of rescue dogs, cats, and horses.

Her favorite aspect of bagel shop ownership is the feeling of community and interactions with customers. Never knowing who will walk through the door on a given day keeps things fresh and exciting, even after almost 20 years.
